RTC-CEC Dinner

Cost: $45 per person (tax, gratuity and soft drinks included), payable in cash at the door)

Location: Escambron Beach Club – 10 minute walk (directions at https://goo.gl/maps/Htrf4FkzfNG2)

Menu (all dietary restrictions can and will be accommodated):

Welcome cocktail: “Escambron Sangria”

Appetizers: Sampler of traditional appetizers (including vegetarian choices)

Buffet:

– Chicken breast in a garlic-cilantro cream sauce

– Pork loin in tamarind salsa

– Pasta with vegetables

– Sides: Rice with Bacon and Onions, Potatoes in Cilantro Butter

– Green salad

– Dessert

Administrators’ Dinner

Cost: $45 per person (tax, gratuity and soft drinks included), payable in cash at the door)

Menu (all dietary restrictions can and will be accommodated):

Appetizers (one of the following):

– Almojabanas (local cheese puff made with coconut milk and rice flour, served with a guava sauce)

–  Taro buñuelos with chorizo

Main Dishes (one of the following):

– Avocado stuffed with shrimp in creole sauce

– Sweet plantain stuffed with Ropa Vieja (Shredded beef)

– Grilled Bell Pepper stuffed with quinoa and vegetables

– Main dishes are served with one of the following: rice and beans, fried plantains or salad.

Dessert (one of the following):

– Nutella Flan

– Passion Fruit Flan

Directors’ Dinner

Cost: $45 per person (tax, gratuity and soft drinks included), payable in cash at the door

Menu (all dietary restrictions can and will be accommodated):

Appetizers: Sampler of traditional Puerto Rican and Cuban appetizers (including vegetarian choices)

Entrée – select one:

 – Relleno de Ropa Vieja (El más famoso de Puerto Rico) Mashed Plantain Stuffed with Flank Steak

 – Dorado en Salsa de Pesto de Tomate Mahi-Mahi in Pesto Tomato Sauce

 – Risotto de Garbanzo y Azafrán Chick Pea and Saffron Risotto (vegetarian)

Dessert – select one:

 – Creme Brulee de Guayaba (Guava)

 – Flan de Vainilla (Vanilla)

Trainees’ Dinner

Join other trainees and their fans for a fun family-style dinner with networking

Cost: $25 per person (tax, gratuity and soft drinks included), payable in cash at the door

Appetizer: Fresh guacamole en Molcajete, prepared tableside with avocado, jalapeño, tomato, onion, and cilantro. Served with tortilla chips and condiment salsas

Buffet of Chicken and Choriza Fajitas (Grilled Chicken Breast with Onion, Cilantro, Poblano, Potatoes and Chorizo) and Beef and Rajas Fajitas (Filet of Beef with Onion, Poblano Chiles, Tomatoes, Cilantro, Potatoes and Rajas)

Sides: House Brown Rice, Refried Black Beans

Dessert: Churros with its Sauces
